My tamagotchi p went to day care while I went shopping and her stats are next to nothing and they were full when I left... Surely this shouldn't happen?

The stats still go down normally during daycare/school/work. It's not intended to be a pause function.

You can leave them there if you're too busy to take care of them. It can be a pause function in a way but that doesn't stop the stats from going down.
My observation is that for the school, the stats go down a bit slower than normal, while the work function drains them quicker but they earn 250GP an hour.
Daycare is operational from 10 AM to 3 PM. If your stats go down while at school, you can bring your character home, attend to their needs and you can send them back.
