My friend Kait, thinks that Ganondorf is spelled "G-A-N-O-N-N-D-O-R-F". Is it spelled with two Ns or one N? She even thinks that it's spelled with two Ns, but i'm trying to tell her that's not the correct spelling!

It's one n only. The only time Ganon's name had more than 1 n was in the original Legend of Zelda translation, as far as I know.
