The different icons unlock when you raise a certain amount of Tamagotchi's to TamaTomo.
Tamatomo's raised:
8 - Fruits Icon
12 - Melody Icon
20 - Wary Cafe Icon
32 - Royal Icon
With any unlocked you just go to the Stat screen menu and scroll to the third page. Press the B button, select the Icon you want to use with the A button then confirm with B.
