Resin went from toddler to UFOtchi... and the Tamagotchi Connection v2 Character Chart on the left under 'Useful Links' says it is an adult... But it definitely isn't... There are only three games instead of four, and she's still needing discipline. Anyone else notice this mistake? With other characters?

Yes - it is a mistake! (Even BanDai isn't perfect....lol)
Ufotchi is definitely a teen character - I've had it several times and it has always evolved into adult characters!
I usually use Bell Sprout's web site (member of TamaTalk & TamaGuide): https://bellsprout.50webs.com
or Rivenn's Tamadex - for V2 growth chart (still under construction) and a list / pictures of all the V2 characters:
