your tama turns into one when it reaches the age of 10 or so.

 
If you refuse the Matchmaker, thus never going into another generation, your Tama continues to grow older until turning into one of three characters. Just to correct, boy Tama evolves into an Ojitchi, girl Tama evolves into an Otokitchi and if you marry an Ojitchi and an Otokitchi the next generation baby will evolve right to an Oyajitchi. (It skips toddler and teen stage)
