No, setting the time forward won't make your tama age. It is all dependent of the amount of time you have had your tama running in 'real' time. Just imagine the clock wasn't on the tama and you had to work out how old it was by the calendar and your watch.
It will age 1 year for every day you've had it running unpaused.
However if you know that if your tama has been an adult for 72hours of unpaused time you can set the clock to get the matchmaker appear at 10.29am, 2.59am and 6.59pm, and waiting a minute.
