How long should I keep my tamagotchi's light off?

What do I do when I sleep in real life? Pause it or turn it's light off?

Well, on the V1-V3 you have to turn the lights off at night. Your tama will call for you and you'll see it in bed, that's when you turn off the lights. In the morning the lights will turn on by themselves. The V4-TF will turn the lights on and off by themselves.
