Well I think you get the child's randomly.

Baby- Child/Toddler - Teen - Adult - Oldie

From our observations

Mizutamatchi mostly turns into the Meme family.

Puchitchi mostly turns to the Mame and Meme family.

Mohitamatchi would mostly turn into the Kuchi group.

It's hard to say because I haven't had my tamagotchi long enough to tell. I basically only play jump-rope. I don't think I do anything out of the ordinary. That's why I'm wondering whether there is something that determines what family you get into. Things like the average amount of points you have when it evolves or the Tama's parents or something like that?...
