It varies, but usually around 72 hours after your Tama becomes an adult.

1st of all, if you pause it, it will slow it down the growth and it will take longer to be able to breed. As afterglw said, 72h is the normal time.

And the matchmaker will come at these times: 7:00 pm, 3:00 pm and 10:30 am.
